Since moving to Texas, I have tried much more Mexican and other Hispanic cuisines than before.
One thing I love, but never got right was picadillo. Until recently. I have found a few ingredients which make this ground beef filling my family’s favorite.
Ingredients
1 pound ground beef
1/2 onion chopped
2 cloves of garlic chopped
2 tbsp. taco seasoning
1-2 tbsp. chipotle paste *
1/4 cup of chopped green olives
A few dashes of Cholula Chipotle sauce.
Serves 4.
Instructions
1. Sautee onion in garlic in a pan in a small amount of oil.
2. Once onion is translucent, add the ground beef to the pan.
3. After beef is browned, drain and return to pan.
4. Add taco seasoning, chipotle paste and Cholula sauce and stir, mixing well.
5. Add green olives.
6. Once all is combined well, the meal is ready.
Feel free to serve in tacos or empanadas.
*You can also make your own chipotle paste by pureeing a can of chipotles in adobo in the food processor.
