In my quest to find a truly amazing burger, Valentina’s has remained somewhat elusive.
They only make burgers on Thursdays; they only make one kind of burger that day; and they are about 20 miles south of where I live.
On my recent week off of my day job, I marked Thursday as the day I was taking a trip down to Manchaca Road to finally try their burger.
Valentina’s was pretty busy this day about 2 p.m. the week of SXSW 2019. Our wait was about 30 minutes and we had to park down the street.
This Thursday, the burger was stuffed with queso blanco and herbed boursin cheeses, plus bacon and heirloom tomatoes. Then, it was topped with mequite smoked tomatoes, carmelized onions and QUESO.

Nothing about this combination turned me off.

This burger was sheer perfection. The rich, smoky flavor combined nicely with the juicy tomato and creamy queso.
My mom thought the hot pink color meant the meat was raw, but I told her no, that was the color the meat turned after it was smoked.
I can only wait until the next week to see what Valentina’s next beefy creation will be.
Pro tip No. 2: Burgers can sell out, but not always, so try to get there early.
One other thing, I had saved plenty of room to make sure I could eat this entire burger. I had no trouble (which I usually do), and didn’t feel like I’d just inhaled a greasy fat bomb.
