
The Pascal burger at Hopfield’s shows up on a few best burger lists around Austin. I was super stoked to try it.
The Pascal comes topped with camembert, cornichons, whole grain mustard, caramelized onions, a brioche bun, and is served with pommes frites and aioli.
I added the egg for some extra flair.
The burger is beautiful to look at, but the taste wasn’t my favorite. The toppings had too much vinegar for other flavors to break through. In fact, the cornichons were a bit too much. I can’t even tell you if the meat was good, because I couldn’t taste it.
The fries, however, were probably the best fries I have ever had in my life. Paired with the fresh aioli, they were heaven. I will return to Hopfield’s for these, maybe dipped in the juice of their mussels.
What made the fries so good was they were crispier than any fries I’d ever had, yet not burned. They were topped with herbs and salt. I’m guessing they probably fried them in something sinful, like fat rendered from the butt cheeks of little babies.
